Zuccini Casserole

So it has been a couple of weeks since the last recipe post. Forgive me, please! I will do two posts to make up for it.

Zuccini Casserole

1 medium squash - cook & mash

1/4 c. chopped onion - cook in butter

1 TB. butter

2 beaten eggs

1 tin kernel corn

1 cup shredded cheese

1/2 tsp salt

1/4 c. bread crumbs

2 tsp cheese - 1 tsp butter, melt on top

Bake 40 min - 350

Let stand 5-10 min.
